Our story

Recipes that came to the city from home kitchens

Saffron Table opened in 2009 with a short menu written from memory: the Sunday dosa, the festival payasam, the Chettinad curry made only when the whole family was home.

The menu has grown since, but the method has not. Rice and lentils are still soaked and stone-ground. Masalas are still roasted in small batches before service. Nothing is rushed that should take its time.

How a dosa is made here

  1. STEP 01

    Soak and stone-grind

    Rice and urad dal soak for six hours, then go through the wet grinder until the batter is smooth and airy.

  2. STEP 02

    Ferment overnight

    The batter rests overnight. Fermentation gives the dosa its gentle sourness and its crisp, lacy texture.

  3. STEP 03

    Roast to order

    Each dosa is spread thin on a seasoned cast-iron tawa and roasted in ghee the moment you order it.
